Is Lion Rampant as dependant on cavalry as I'd expect given its emphasis on feudal combat? Or is it possible to field largely or entirely infantry forces and still play the game in a reasonable manner?

Cavalry only have 6 figures and can be pretty fragile. Every unit has it's strength, cavalry charge well but as with any other game, charging a fresh strong unit isn't going to end well.

I'm just curious as to what kind of forces I might be able to make out of what I have so far (which doesn't include much cavalry), though obviously I can work on cavalry in the medium term.

You can have an entirely infantry force with no problems.
